Healthy Egg Salad

I have never been the biggest fan of egg salad; it's all the yoke that wares on me.  When I found this recipe I was excited to give it a try.  Happy to report that it was a hit for me + it's healthy!  Bonus!

Ingredients:
  • 8 eggs
  • 3 tbsp. part skim ricotta cheese
  • 3 tbsp. plain yogurt
  • 2 tsp. dijon mustard
  • 2 tbsp. finely chopped chives (you could also use green onions, if they are easier to have on hand)
  • 1/2 tsp. coarse salt
  • pepper

Directions
  1. Prepare an ice water bath
  2. Hard boil your eggs and plunge into ice water bath to cool
  3. Peel eggs, reserve two yokes discard the rest, (keep all the whites) finely chop and crumble the eggs
  4. Whisk ricotta cheese, yogurt, mustard, chives, and S&P, to combine
  5. Add to eggs, and mix
Serve on your favorite bread with some lettuce and your other favorite sandwich fixin's!
