I have never been the biggest fan of egg salad; it's all the yoke that wares on me. When I found this recipe I was excited to give it a try. Happy to report that it was a hit for me + it's healthy! Bonus!
Ingredients:
- 8 eggs
- 3 tbsp. part skim ricotta cheese
- 3 tbsp. plain yogurt
- 2 tsp. dijon mustard
- 2 tbsp. finely chopped chives (you could also use green onions, if they are easier to have on hand)
- 1/2 tsp. coarse salt
- pepper
Directions
- Prepare an ice water bath
- Hard boil your eggs and plunge into ice water bath to cool
- Peel eggs, reserve two yokes discard the rest, (keep all the whites) finely chop and crumble the eggs
- Whisk ricotta cheese, yogurt, mustard, chives, and S&P, to combine
- Add to eggs, and mix
Serve on your favorite bread with some lettuce and your other favorite sandwich fixin's!
